DIY Chai Marshmallows



Enjoy the cozy, chai-flavored flavors of these housemade marshmallows. These chai-infused marshmallows are a delightful treat for any occasion, and they're perfect for snacking or adding to your hot cocoa or chai tea.

Ingredients:

  • 2 cups granulated sugar
  • 1/2 cup water
  • 2 tablespoons powdered gelatin
  • 1/2 cup cold water
  • 1/4 cup chai tea leaves loose or in tea bags
  • 1/4 cup confectioners' sugar
  • 1/4 cup cornstarch
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions:

In a small bowl, combine the powdered gelatin and 1/2 cup of cold water

Let it sit for 5-10 minutes to bloom

In a saucepan, combine the granulated sugar, 1/2 cup of water, and chai tea leaves

Heat over medium heat, stirring until the sugar is dissolved

Once dissolved, let it simmer for 5 minutes to infuse the chai flavor

Strain the chai-infused sugar syrup into a separate bowl to remove the tea leaves

In a stand mixer bowl, pour the chai-infused sugar syrup and add the bloomed gelatin mixture

Using the whisk attachment, start on low speed and gradually increase to high

Whip for 10-15 minutes or until the mixture becomes thick and fluffy

In a separate bowl, combine confectioners' sugar, cornstarch, cinnamon, cardamom, cloves, ginger, nutmeg, and salt

Prepare a baking pan 9x9 inches by greasing it and dusting it with some of the confectioners' sugar and spice mixture

Once the marshmallow mixture is whipped and fluffy, add the vanilla extract and mix for another minute

Pour the marshmallow mixture into the prepared baking pan and smooth the top with a spatula

Dust the top with more of the confectioners' sugar and spice mixture

Let the marshmallows set at room temperature for 4-6 hours or overnight until they are firm

Once set, use a sharp knife or cookie cutters to cut the marshmallows into desired shapes

Toss the cut marshmallows in the remaining confectioners' sugar and spice mixture to prevent sticking
