Polenta with Black Beans and Mango Salsa



A flavorful and satisfying vegan dish featuring creamy polenta served with zesty black bean and mango salsa.

Ingredients:

  • 1 cup polenta
  • 3 cups water
  • 1 can black beans, drained and rinsed
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 red bell pepper, diced
  • 1/4 cup chopped fresh cilantro
  • Juice of 2 limes
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions:

Bring water to a boil in a saucepan

Slowly whisk in the polenta

Lower the heat and cook, stirring often, for 20 to 25 minutes, or until the mixture thickens

To make the salsa, put the black beans, mango, red onion, red bell pepper, cilantro, lime juice, salt, and pepper in a bowl

Put away

To make the olive oil, put the polenta on low heat and heat it up

In a skillet, cook the polenta until both sides are golden brown, about 5 minutes per side

You can cut it into squares or any other shape you want

Black bean and mango salsa should be put on top of the cooked polenta
