Ingredients:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/2 cup shredded coconut
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/3 cup coconut oil, melted
- 1/4 cup maple syrup
- 1 tbsp lime zest
- 2 tbsp lime juice
- 1 tsp vanilla extract
Instructions:
Warm the oven up to 350F 175C and put parchment paper on a baking sheet
Put coconut flour, shredded coconut, baking soda, and salt in a large bowl
Mix them all together
To make the glaze, melt the coconut oil and mix it with the maple syrup, lime zest, lime juice, and vanilla extract in a different bowl
Add the wet ingredients to the dry ones and mix them together until everything is well mixed
Using a cookie scoop, put dough on the baking sheet that has been prepared
Then, use your fingers to flatten the dough a bit
Put it in the oven for 10 to 12 minutes, or until the edges turn golden brown
Take it out of the oven and let it cool for 5 minutes on the baking sheet
Then, move it to a wire rack to finish cooling
